Turn your casual customers into regulars and attract endless customers with the technique of meticulously selecting coffee beans.

When opening a restaurant, choosing the right ingredients is important. When opening a coffee shop, choosing the right coffee beans is equally important. The aroma and bitterness that blend together to create a delicious beverage that is popular all over the world. Purchasing coffee beans is something that coffee shop owners should not overlook, because good coffee beans will help increase the smoothness and make your coffee more special than other shops.
3 techniques for selecting coffee beans
  1. The relationship between coffee makers and ground coffee beans
The first thing to consider is that each type of fresh coffee maker has different working processes. Each maker usually specifies the type of roasted and ground coffee beans that are suitable for use. These two things are related to deciding to buy the right coffee beans. Generally, people who choose to buy a maker called an espresso machine, the roasted and ground coffee that they choose should also be of the espresso type.

2. Packaging for ground roasted coffee beans must be standardized.
Choosing good coffee beans must also look at the packaging. Generally, according to the standard, they must be tightly packed in a special bag with foil to help protect the coffee beans from sunlight. They must be sealed tightly so that outside air cannot enter. And what's more interesting is the design of high-quality packaging. Because coffee beans that have been in a department store for a long time will naturally release gas. If there is no vent, the roasted coffee beans inside will deteriorate quickly. Therefore, we should choose packaging that has a "One Way Vale" ventilation system or a ventilation system that can squeeze the air in the bag out, but block the air from outside.

3. Be sure to check the label on the ground coffee beans first.
The final step before deciding to buy roasted ground coffee beans, you should also look at the label of the package to see what kind of coffee beans it is. As mentioned, it should be suitable for the type of brewing machine. Look at the production date, source of production, amount of coffee beans, and look at the bag style to see if there are good enough packaging standards. You should also choose to buy roasted coffee beans that have not been ground and make them yourself using a grinder at the shop, grinding in small quantities to maintain the taste of the coffee at all times.

How are coffee varieties different? Now that we know the techniques for selecting from the outside, let's learn about the properties of each type of coffee bean, which has different flavors, textures, and coffee intensity. Let's get to know 4 types of coffee that will help you decide on the right coffee beans for your shop.
  1. Arabica coffee
Coffee species that have been discovered and grown for a long time. The area used to grow Arabica to produce good quality products should be high and have cool weather. This is why we can find the most Arabica plantations in the northern provinces of Thailand, such as Chiang Rai, Chiang Mai, Lampang, etc. When roasted, it will have a unique aroma that is just right, along with a flavor that is mellow and smooth. It also has a low caffeine content of less than 2%. This low caffeine content is what makes Arabica coffee the most popular and best-selling species in the world.

2. Robusta coffee (Robusta)
The second most popular coffee species in the world after Arabica. The shape of the beans is plump and the center cut is straight. Robusta is grown in completely different areas from Arabica, namely in lowland areas. The smell of Robusta coffee when roasted is rather pungent. The taste is stronger and more bitter because of the caffeine content of more than 2%. Therefore, Robusta is popularly used to produce instant coffee and 3in1.
There is also Excelsa coffee. Popular with Africans, the flavor of Excelsa beans is intense and the bitterness in the throat, and Liberica coffee . The taste is similar to Arabica but has a sweet and sour taste of berries. This coffee variety is often used for special preparations or blended with other coffee varieties.
Most coffee shops use more Arabica or Robusta coffee beans.
In business, there is no coffee bean that is the hero or the supporting actor. The selection of coffee beans for each shop will depend on the customer group and the menu that must be prepared. Because 100% Arabica has a strong aroma, it is true that it is suitable for hot coffee or iced coffee that is not heavily seasoned, emphasizing a universal recipe. But for shops that have an iced coffee recipe that emphasizes strong, sweet, creamy preparation, they want coffee with a heavy body. Therefore, they must mix Arabica and Robusta coffee beans together to create a perfect taste that is more pleasing to customers. But the proportion of mixing depends on the preferences and costs of each shop.

Most of the fresh coffee we drink these days comes in two forms:

– 100% Arabica (single species of Arabica, no Robusta)
It can be roasted to the same level or blended with different roast levels.
– Arabica in proportion is a blend of Robusta in proportion (Arabica strain mixed with Robusta strain).
They can be roasted to the same level or to different levels of roast and blended together.

This time, in addition to learning about choosing coffee beans, another important thing is to learn about the roasting level. Generally, shop owners can buy pre-roasted coffee beans and grind them for use in the shop.
Coffee bean roasting level

“Roasting” is one of the processes that is no less important than any other method. The taste of coffee will change in a better or worse direction. Roasting plays a part in controlling the taste or it can be said that it is the heart of making coffee. Because natural coffee beans have no smell or taste, we will not get any aroma from raw coffee beans. Roasting is like creating a story, drawing out the outstanding aroma of coffee as much as possible. When coffee beans are heated, there will be changes inside the beans, especially the oils that will evaporate. In addition, the changes in various chemicals inside make us get more aromatic coffee.

Coffee Roasting in Thailand There are 3 main levels of roasting: light roast, medium roast, and dark roast. The roasting level of coffee affects the taste, sourness, sweetness, bitterness, and aroma of the coffee as follows:

  1. Light roast level (Light roast, Half city, Cinnamon roast) This roasting level will make the coffee beans light brown, similar to the color of cinnamon. This roasting level will maintain the original characteristics of the coffee and have a high acidity, freshness and astringency, suitable for making hot coffee (espresso, americano).
  2. Medium roast level (Medium roast, Full city, American) This roast level has coffee beans that are medium dark brown in color, but darker than light roast, but not to the point of being black. Medium roasting level will give a bittersweet taste and a little sourness. It is suitable for making hot and iced coffee. In the case of hot coffee, it will have less acidity than light roast level. And when making iced coffee, the taste will not be as strong as dark roast level. And this roasting level gives a smooth and mellow taste.
  3. Dark Roast Level (Dark roast, Continental roast, Vienna roast) This roasting level has dark brown coffee beans, slightly bitter and sweet, no acidity left, and a strong coffee aroma mixed with coffee aroma. It is suitable for making iced coffee that requires a strong taste or a lot of coffee texture. It is most suitable for iced espresso menus because other menus may make the coffee taste too bitter.
It can be seen that roasting is the key to controlling the taste and smell of coffee to be different. Therefore, after all the processes that have passed, when it comes to coffee roasting, it is considered the final step to create the highest quality coffee taste.
