Preparation

  1. Bring whipping cream to a boil over medium heat, then turn off the heat. Add dark chocolate couverture and let it sit for about 1 minute, then stir until smooth.
  2. Add milk and mix well. Then add eggs and egg yolks and mix well.
  3. Arrange the frozen raspberries on the tart shells, then pour the chocolate mixture almost full into the tart shells.
  4. Bake at 160 °C for about 10-15 minutes or until cooked through, the edges starting to set but the center is not yet set.
  5. Place on a wire rack and let cool.
