Preparation

  1. Mix the purple sweet potato powder with hot water until well blended. Add the frozen pasteurized egg yolk mixture, Aero brand. Mix the ingredients until well blended.
  2. Pour into the mold 3/4 full. Bake at 160 degrees Celsius for 20 minutes. Leave at room temperature, then refrigerate to set.
  3. Sprinkle with sugar and burn until the sugar caramelizes. Decorate with whipped cream, candied purple sweet potatoes and mint leaves.
