Preparation
- Mix the ground meat with the minced garlic, minced onion, minced celery, minced carrot, diced bell pepper. Mix all the ingredients until well combined.
- Add the meatballs mixed with vegetables to the pan and stir-fry until they start to cook. Add the Mexican chili, red beans, and canned crushed tomatoes. Stir-fry until the ingredients are cooked through.
- Heat a pan with soybean oil. Fry the potato waffles until golden brown. Remove and set aside.
- Arrange the fried potato waffles on a plate, top with the fried meatballs, garnish with sour cream, and sprinkle with diced fresh tomatoes and coriander for garnish.
- 5. Ready to serve.
