Preparation

  1. Pour cooked rice into a container and press it flat. Cover with plastic and place a heavy material on top and leave to cool. Cut into bite-sized squares.
  2. To make the dipping sauce, start by blending dried chilies with water and set aside. Blend ginger, boiled potatoes, fried shallots, and Aero coconut milk together.

  4. Slice the meat into thin pieces, marinate with lemongrass, crushed ginger, season with salt, sugar, evaporated milk, turmeric powder, leave for 1 night.
