Preparation

  1. Chop the shallots, coriander root, fresh green chillies and prepare the curry leaves.
  2. Heat a pan with oil, add raw peanuts, fry until the peanuts are crispy and turn light brown.
  3. Heat oil in a pan again, add mustard seeds and stir fry, then add chopped shallots, curry leaves, curry powder and stir fry to combine.
  4. Add water to the Indian rice until moistened, then stir-fry with the ingredients in the pan until well blended. Season with salt to taste, then add chopped green chilies and chopped coriander.
  5. Add sugar, fried peanuts and stir-fry until well blended. Squeeze lime juice and mix well before eating.
  6. Ready to serve
