Preparation
- Use scissors to cut the shell off the belly of the lobster tail to remove the meat.
- Cut the lobster tail into bite-sized pieces.
- Marinate with sesame oil, seasoning sauce, Chinese rice wine, ground white pepper, white sugar. Mix well and marinate for 10 minutes.
- Place a pot on the stove with oil and sear the lobster tails in the oil for about 20 seconds. Add the shells to garnish the dish.
How to Stir Fry Lobster Tail
- Place a pan on the stove with oil over high heat. When the pan is hot, add Chinese garlic, coriander root, pepper, and green and red chili peppers.
- Stir-fry until fragrant, then add the lobster tail and stir-fry until well blended.
- Add Chinese rice wine, turn on high heat, season with light soy sauce, white sugar, sesame oil, and turn off the heat. Sprinkle with chopped spring onions, garnish and serve.
