Preparation

  1. Add oil to a pan and fry the shallots without using too high heat.
  2. After we have fried the shallots, let's make the dipping sauce using red chili, coriander root, and garlic. Then pound all three ingredients until they are a single texture.
  3. When it is finely ground, add the mixture of water, vinegar, salt, and sugar into a pot and heat it up. Then add the ground ingredients. Then turn off the gas.
  4. Make the chicken marinade by pounding garlic, ground cumin, white peppercorns, and coriander seeds until fine. Once finely pounded, scoop into a container for marinating the chicken.
  5. Then add seasoning sauce, pomegranate, palm oil, salt, seasoning, brown sugar, wheat flour, water. Mix until well blended. Then add chicken and marinate for 30 minutes. If you want it to be more delicious, you can marinate it overnight.
  6. Put the chicken skin in the pan and fry it. Use medium-low heat. Do not use high heat because the chicken will not cook and will burn.
